We would suggest not doing tambours doors at all, but rather, create glass cabinet storage with interior lights, while carrying the upper cabinet to the countertop to prevent the cabinet corners. This will provide relief from the other solid door cabinets and storage for larger decorative items such as tureen's or serving plates, teapots and the like. Whether you should have one or two depends entirely on the layout of your kitchen. If it feels fairly symmetrical then two might be the best choice, but until someone sees your kitchen it will be hard to advise in this area.
A kitchen should have as many drawers as you can possibly fit into it. If you seriously consider and determine what will be stored in each drawer, you can create more than the standard 3 drawers per unit to include linens, utensils, spices, etc. Typically, drawers perform much better than doors with shelves, because you have easy access to the backs of the cabinets, just as lazy-susans are almost indispensable for lower corner cabinets.
